Mushroom Fried Rice | Step by step recipe


Mushroom Fried rice

Quick,easy and delicious mushroom fried rice.
Prep Time: 10 minutes
Cooking Time: 20 minutes
Serves: 2
Ingredients:
  1. Long grain rice- 3/4 cup
  2. Garlic,finely chopped - 1.5 tsp
  3. Green chili,finely chopped - 1( or according to taste)
  4. Spring onion whites,chopped - 1 tbsp
  5. Onion,finely chopped - 2 tbsp
  6. Vegetables,finely chopped - 1 Cup( use carrot,cabbage and green beans)
  7. Mushroom,sliced - 1 cup
  8. Capsicum,chopped - 1/4 cup
  9. Soya sauce - 1/2 to 3/4 tsp
  10. Black pepper powder- 1 to 1 and 1/4 tsp( according to taste)
  11. Spring onion greens,chopped - 1 tbsp
  12. Salt - to taste
  13. Oil - as required(i used olive oil)
Instructions:

  • Wash the rice , soak for about 15 minutes and cook  just until done.Fluff it up using a fork and allow to cool completely.
  • Heat oil in a pan.Add garlic and saute for few seconds and then add green chili,spring onion whites and onion.Saute until onion turns translucent.
  • Now add carrot,cabbage and green beans and saute for about  1 minute.Now add mushrooms and  and saute until it is done.
  • Add capsicum and saute for 2 more minutes.Next add soya sauce,pepper powder and salt to taste.Stir continuously for about 1 minute.
  • Now add cooked rice and gently mix until combined.Garnish with spring onion greens.
  • NOTES
    • Adjust the quantity of black pepper powder according to your taste.

                  Dragon Chicken


                  Dragon Chicken


                  Spicy Chinese style Dragon chicken
                  Prep Time: 20
                  Cooking Time: 20 minutes
                  Serves: 2
                  Ingredients:
                  1. Boneless Chicken,cut into 2" long strips - 250 to 300 gms
                  2. Cashew nuts- 10 to 12 nos
                  3. Dry red chilies- 2 ( cut into 2 )
                  4. Celery,chopped - 1 tbsp
                  5. Ginger,finely chopped- 1 tsp
                  6. Garlic,finely chopped- 1 tsp
                  7. Red chili flakes - 1/2 to 1 tsp
                  8. Onion ,chopped- 1 medium
                  9. Carrot,sliced- 1  tbsp
                  10. Bell pepper,sliced - 1/2 cup
                  11. Red chili paste - 1/2 tsp
                  12. Tomato sauce- 1.5 tbsp
                  13. Soya sauce- 1.5 tsp
                  14. Water - 1/4 cup
                  15. Salt- to taste
                  16. Oil- as required
                  17. Spring onion,chopped - 1 to 2 tbsp
                  For Marination:
                  1. Soya sauce-1/2 tsp
                  2. Pepper powder- 1/2 tsp( or to taste)
                  3. Red chili paste - 1 tsp( see notes)
                  4. Egg white-1
                  5. Ginger garlic paste- 2 tsp
                  6. Cornflour - 2 tbsp
                  7. Salt - to taste
                  Instructions:

                • In a bowl,combine together all the ingredients listed under' For Marination'.Rub this onto the chicken pieces and keep aside for 10 to 15 minutes.Deep fry the chicken pieces until golden and tender .Drain and keep aside.( you can also bake the chicken pieces as i did.For baking preheat oven to 180 deg C,place the chicken pieces onto a greased baking tray ,without overlapping and bake for about 15 to 18 minutes,turning once in between.)
                • To prepare the sauce,heat oil in a pan,add cashew nuts and saute until it turns slightly golden.Next add,dry red chilies,celery,ginger ,garlic and red chili flakes.Saute until raw smell leaves.
                • Now add onion and carrot and saute until onion turns golden brown.


                • Next add bell pepper  and saute for a minute or two.
                • Add red chili paste,tomato sauce , soya sauce and salt to taste.Mix well until combined.Next add 1/4 cup water and cook for about few minutes or until the sauce thickens.
                • Next add the fried chicken and mix well until combined.Add chopped spring onion and serve with rice /noodles.

                • NOTES
                  • To prepare red chili paste,soak Kashmiri chilies /Bigdi chilies in warm water for about 10 minutes and grind to form a smooth paste.Remove the seeds from the chilies ,if you like it less spicy.

                        Schezwan Fried Rice Recipe

                        Schezwan style fried rice
                        Prep Time: 15 minutes
                        Cook time: 10 minutes
                        Serves: 2 to 3 people
                        Ingredients:
                        1. Cooked rice- 3 cups
                        2. Garlic,finely chopped-1.5 tsp
                        3. Onion ,finely chopped-1 to 2 tbsp
                        4. Celery,finely chopped- 1/2 tbsp
                        5. Spring onion whites,chopped-1 tbsp
                        6. Vegetables, sliced/chopped-1 cup(use carrot ,cabbage and green beans)
                        7. Capsicum(red/yellow/green)- 1/2 to 3/4 cup
                        8. Schezwan sauce- 2 tbsp(I used homemade Schezwan sauce)
                        9. Soya sauce- 1/2 tsp
                        10. Vinegar- 1/2 tsp
                        11. Black pepper powder- to taste
                        12. Spring onion greens,chopped- 1 or 2 tbsp
                        13. Salt- to taste
                        14. Oil- as required
                        Instructions:
                      • Heat oil in a pan,add garlic and saute for few seconds.Add onion,celery,spring onion whites and saute for a minute.

                      • Add vegetables and cook on high flame for 2 to 3 minutes.Add capsicum and saute for one more minute.

                      • Add schezwan sauce, soya sauce ,vinegar and  black pepper powder.Mix well and cook for few seconds.
                      • Add cooked rice and mix gently until combined.Add salt if required.Garnish with spring onion greens.


                      • NOTES
                        • Adjust the spice level according to your taste.

                          Schezwan Sauce Recipe


                          Schezwan Sauce Recipe



                          Homemade Schezwan sauce,can be had as a dip or used to make Schezwan style fried rice/ noodles,Schezwan Chicken and lot more!!
                          Recipe adapted from: The chef and her kitchen ,you can find the original recipe here.
                          Prep Time: 10 minutes
                          Cook time: 20 minutes
                          Yields: 1.5 cups sauce
                          Ingredients:
                          1. Garlic cloves- 10 to 15 nos
                          2. Red chilies,-10 to 12 nos ( see notes)
                          3. Garlic ,finely chopped- 3 tbsp
                          4. Ginger,finely chopped- 1 tbsp
                          5. Celery,finely chopped-1 tbsp
                          6. Tomato,pureed-2 large
                          7. Tomato sauce- 1 tbsp
                          8. Soya sauce- 1 tsp
                          9. Vinegar- 1 tbsp
                          10. Sugar- 1/2 tsp
                          11. Black pepper powder- 1/2 tsp
                          12. Salt- to taste
                          13. Oil- as required
                          Instructions:
                        • Remove the stems and soak the red chilies in warm water for 30 minutes.( Remove the seeds,if you like it less spicy).Grind together garlic pods and soaked red chilies  to form a smooth paste.Keep aside.
                        • Heat oil in a pan,add chopped garlic and saute for a minute.Add  ginger and celery ,saute until raw smell leaves.
                        • Add tomato puree ,mix well and simmer for few minutes.
                        • Add red chilli-garlic paste and cook until oil starts to separate.
                        • Now add tomato sauce,soya sauce,vinegar,sugar ,black pepper powder and salt to taste.Cook for 2 to 3 minutes.
                        • Cool and store in an air tight container in refrigerator for upto a week.
                        • This sauce can be used to make Schezwan fried rice, Schezwan Noodles, Schezwan Chicken, Mumbai Street Food- Schezwan dosa etc.Recipes coming soon!!
                        • NOTES
                          • I used Kashmiri red chilies ,as it gives a great red color to the sauce and is less spicy.If you are using regular red chilies,adjust the number according to your spice level and also remove the seeds.
                          • I halved the recipe and got approximately 3/4 cup sauce.
                          • Make sure you cook the tomato puree and red chili -garlic paste well,until the raw smell leaves.

                            VEGETABLE FRIED RICE



                            Ingredients
                            1. Cooked basmati rice- 4 cups
                            2. Ginger and garlic -chopped finely- 1 tbsp
                            3. Green chili - finely chopped-1 no( see notes)
                            4. Onion -chopped- 1 small
                            5. Vegetables- chopped(use carrots,beans&cabbage)-2 cups
                            6. Spring onion chopped-2 tbsp
                            7. Celery chopped-3 to 4 tbsp 
                            8. Soya sauce-1 tbsp
                            9. Tomato sauce-1 tbsp
                            10. White vinegar-1/4 tsp
                            11. Black pepper powder- to taste
                            12. Salt to taste
                            13. Oil
                            Method
                            1. Heat oil in a pan ,add ginger and garlic and green chilies.Saute for few seconds or until raw smell leaves.
                            2. Add onion and saute until it turns translucent.
                            3. Now add chopped vegetables,spring onion and celery.Cook over high flame for few minute.( Do not over cook)
                            4. Combine together soya sauce,tomato sauce and vinegar in a small bowl and add it to the pan.Mix well until combined.
                            5. Add the cooked rice ,salt  and pepper powder to taste.Mix gently until combined.
                            Note:If you don't want to use green chilies ,use chili sauce instead.In that case add it along with the rest of the sauces.

                            CHILLI GOBI | CHILLI CAULIFLOWER





                            Ingredients
                            1. Cauliflower florets- 1 & 1/2 cups
                            2. Ginger - chopped-1&1/2 tsp
                            3. Garlic- chopped-1&1/2 tsp
                            4. Green chilies-cut into two-2 to 3 nos ( or to taste)
                            5. Onion -cubed- 1 medium sized
                            6. Spring onion-chopped- 1 tbsp
                            7. Red chili flakes-1/4 tsp( optional)
                            8. Capsicum/bell pepper-cubed- 1/2 of a medium sized
                            9. Kashmiri chili powder-1/2 tsp
                            10. Black pepper powder-1/2 tsp
                            11. Soya sauce- 1 &1/2 tsp
                            12. Tomato sauce-1 tbsp
                            13. Sugar-1/4 tsp
                            14. Cornflour -1 tsp
                            15. Water- as required.
                            16. Spring onion greens- chopped- 1 tbsp
                            17. Salt to taste
                            18. Oil- as required

                            For batter

                            1. All purpose flour-3 tbsp
                            2. Corn flour- 3 tbsp
                            3. Ginger garlic paste-1/4 tsp
                            4. Soya sauce- 1 tsp
                            5. Black pepper powder-1/4 tsp
                            6. Salt to taste
                            7. Water -as required

                            Method

                            • Combine all the ingredients listed under 'for batter' to form a thick batter.
                            • Heat oil in a pan ,dip each cauliflower floret into the prepared batter and deep fry until it turns golden brown.Drain onto a kitchen towel.Keep aside until required.
                            • To prepare the sauce,heat oil in a pan and add,ginger,garlic and green chilies.Saute till the raw smell leaves.
                            • Add onion,spring onion,red chili flakes and capsicum,cook until it is just done.
                            • Now add kashmiri chili powder and pepper powder.Saute for few seconds or until  the raw smell leaves.
                            • Add soya sauce ,tomato sauce,sugar,salt to taste and 1/4 cup water.Bring this to a boil.Mix cornflour with water to form a paste and add this to the gravy,stirring continuously as you do so.
                            • Cook for about 2 minutes( stirring continuously) or until the sauce turns thick and  glossy .
                            • Add  the fried cauliflower florets,mix well until combined .Add chopped spring onion greens.

                            Serve with fried rice.

                            CHILLI TOFU






                            Ingredients

                            1. Tofu(firm)cubed-250 gms
                            2. Cornflour-1 1/2 tbsp
                            3. Ginger (julienne)-2 tsp
                            4. Garlic (chopped)- 1 tsp
                            5. Onion chopped finely- 1 no
                            6. Green chilies chopped- 1 no(or to taste)
                            7. Spring onion(chopped)-2 tbsp
                            8. Red chili powder-1/2 to 3/4  tsp
                            9. Soya sauce-2 tsp
                            10. Tomato sauce-1 to 1 1/2 tbsp
                            11. Pepper powder- to taste
                            12. Salt to taste
                            13. Water
                            14. Oil




                            Method

                            • Combine cornflour ,pepper powder and salt to taste with enough water to form a thick batter.
                            • Add the tofu cubes into this batter and mix carefully.
                            • Heat oil in a pan and shallow fry the tofu cubes, turning sides in between until it turns golden brown.(You can also deep fry the tofu cubes if you wish to do so)
                            • Drain this onto a kitchen towel and keep aside.
                            • Now heat oil in a pan , add ginger , garlic and green chilies and saute till raw smell leaves.
                            • Add chopped onion and spring onion.Saute till onion turns translucent.
                            • Add red chili powder and saute for a few seconds.
                            • Now add soya sauce and tomato sauce.Stir well.
                            • Add the fried tofu cubes and mix until combined.
                            • Switch off the heat ,garnish with chopped spring onions.

                            VEGETABLE NOODLES






                            Simple vegetable noodles using instant  MAGGI NOODLES

                            Ingredients

                            1. MAGGI noodles- 2 cakes
                            2. MAGGI taste maker-1 packet (the one that you get with the noodles)
                            3. Ginger chopped-1 tsp
                            4. Garlic chopped- 1 tsp
                            5. Green chilies chopped- 1 no
                            6. Spring onion chopped- 2 tbsp
                            7. Onion sliced finely- 1/4 cup
                            8. Cabbage(julienned)-1/2 cup
                            9. Carrots(julienned)-1/2 cup
                            10. Green beans(julienned)-1/2 cup
                            11. Capsicum/bell pepper-(julienned)-1/2 cup
                            12. Soya sauce- 1 tbsp
                            13. Tomato sauce- 1tbsp
                            14. Olive oil
                            15. Water
                            16. Salt to taste


                            Method

                            • Cook the noodles with enough water till done(DO NOT add the taste maker).Drain well and keep aside.
                            • Heat oil in a pan add ginger and garlic and saute till the raw smell leaves.
                            • Now add the green chilies and spring onion,saute for a few seconds.
                            • Add onion and saute for a minute.Now add cabbage,carrot,green beans,and capsicum.
                            • Cook the vegetables on high flame for a few minutes,stirring in between.Do not over cook the vegetables.
                            • Now add the taste maker ,soya sauce and tomato sauce , mix well.
                            • Add the cooked noodles and mix well.Add salt if required
                            • Switch off the flame and drizzle olive oil on top and garnish with chopped spring onion.
