Eggless Jowar Banana Muffins | Eggless Sorghum Flour Banana Muffins

Eggless Jowar Banana Muffins


Eggless,dairy free,gluten free Banana muffins using sorghum flour.
Prep Time: 10 minutes
Cooking Time: 20 to 22 minutes
Makes: 8 muffins

Ingredients:
  1. Sorghum flour /Jowar flour - 3/4 cup
  2. Baking soda- 1/2 tsp
  3. Baking powder - 1/2 tsp( 1 large)
  4. Salt - 1 pinch
  5. Banana ,mashed - 3/4 cup
  6. Sugar - 6 tbsp( i used brown sugar)
  7. Oil (or melted ghee) - 1/4 cup
  8. Vanilla extract - 1/4 to 1/2 tsp
  9. Walnuts or cashew nuts ,chopped - 1 to 2 tbsp
Instructions:

  • Preheat oven to 180 deg C.Line the muffin tin with paper liners.
  • In a bowl,combine together sorghum flour,baking soda,baking soda and salt.
  • In a separate bowl ,combine together mashed banana,sugar,oil( i used ghee) and vanilla extract.Mix well until combined.
  • Gently fold in the flour mixture in two batches,just until combined.Do not over mix.
  • Fill the cupcake liners so that they are 3/4 th full.Top with chopped nuts,if desired.Bake at 180 Deg C for about 20 to 22 minutes or until a skewer inserted into the center of the cupcake comes out clean.Transfer to a wire rack to cool.
  • NOTES
    • If the batter is too thick add 1 or 2 tbsp of water and mix gently.

        Rice Cooker- Banana Cake |How to make cake in a rice cooker


        Rice cooker Banana Cake





        Learn how to make a Perfect Banana cake using rice cooker.

        Prep Time: 10 minutes .
        Cooking Time: 60 to 80 minutes
        Makes: 8" Cake
        Ingredients:
        1. Banana,mashed- 1 and 1/4 cups( about 5 medium)
        2. Sugar - 3/4 cup
        3. Vegetable oil or melted butter - 3/4 cup
        4. Vanilla extract - 1 tsp
        5. Eggs - 4
        6. All purpose flour,lightly spooned into measuring cup and leveled off- 1 and 1/4 cups
        7. Baking powder - 1 tsp
        8. Baking Soda - 1 tsp
        9. Salt - 1/8 tsp
        Instructions:
      • In a mixing bowl,mash the bananas using a fork.Keep aside until required.
      • In a mixing bowl,combine together sugar,vegetable oil ( or butter) and vanilla extract.Add the eggs ,mix well using a whisk or a fork, until well combined.
      • Now add the mashed bananas .
      • Mix well until combined.In another mixing bowl combine together all purpose flour,baking powder,baking soda and salt using a fork.
      • Add this to the banana mixture and gently mix until combined.
      • Pour the batter into a lightly grease rice cooker pot.Press cook and let it cook for about 60 minutes or until a skewer inserted into the cake comes out clean.
      • If it switches itself to " Keep warm" ,flip it back to cook.If it refuses to stay there ,wait for few minutes and then press cook.(I had to press the cook button 6 times, during the total cooking time of 80 minutes.)
      • Allow it to cool slightly before turning it onto a plate.
      • NOTES
        • I used a 1.5 ltr push lever type rice cooker with a non- stick pot. 
        • The cooking time depends upon the type / volume of the rice cooker you use.So  the cooking time can be anywhere between 45 to 80 minutes.
        • Do not open the rice cooker too often to check for doneness,as this may affect the cooking time.Make sure you do not open the rice cooker for at least the first 30 minutes of cooking.

                  Sarkara Varatti | Sarkara Puratti | Sweet Plantain Chips | Onam Sadhya Recipe


                  Sarkara Varatti




                  Sweet plantain chips ,usually made during Onam festival.
                  Prep Time: 10 minutes
                  Cooking Time: 60minutes
                  Makes: 4 to 5 cups
                  Ingredients:
                  1. Raw Plantain / Nendra kaya - 5 to 6 large( 1 kg)
                  2. Turmeric powder - 1/4 tsp
                  3. Jaggery,grated - 300 gms( approx 1.5 cups loosely packed)
                  4. Roasted rice powder - 2 to 3 tbsp
                  5. Cardamon powder - 3/4 to 1 tsp
                  6. Cumin powder- 1 tsp
                  7. Dry ginger powder- 1.5 to 2 tsp
                  8. Coconut oil,for frying- as required
                  9. Water- as required
                  Instructions:

                • Peel and soak plantain in water mixed with turmeric powder for about 5 minutes.
                • Drain well and cut each one vertically into half.Slice the halved plantains into 1/4 " thick pieces.
                • Heat oil in a pan .When the oil turns really hot ,carefully add the sliced plantain( in batches) and reduce the flame to medium-low.Stir the pieces gently so that they do not stick to each other.Cook until it turns crisp and golden brown.( make sure you fry the chips over medium-low flame ,or else the outside will brown too quickly and the inside will be soft and uncooked on the inside.)Drain and keep aside.Allow this to cool completely.
                • Heat grated jaggery along with few tbsp of water .(Strain this to remove impurities ,if any.)Cook the jaggery mixture over medium low flame until it reaches single thread consistency.To check this,take a drop of the jaggery syrup between your thumb and index finger and pull gently,if a single thread is formed the jaggery syrup is ready. ( Note: the jaggery syrup will be very hot)
                • Now add the chips and mix well.Switch off the stove and add the rice flour,cardamom powder,cumin powder and dry ginger powder.Stir well.
                • Stir this continuously until the jaggery syrup solidifies and each pieces are separated.
                • NOTES
                  • Single thread consistency of the Jaggery syrup is very important to obtain the perfect texture.
                  • Adjust the quantity of the spices according to your taste.
                  • Make sure you fry the chips well over medium low flame until it turns crispy.

                        Ingredients:
                        1. Rolled oats- 2 to 3 tbsp
                        2. Pear ,peeled and cubed- 1
                        3. Banana ,peeled and sliced- 1
                        4. Low fat Yogurt-1/2 cup
                        5. Cinnamon - 1 pinch
                        6. Ginger,grated- 1/4 tsp
                        7. Honey / sugar- to taste
                        Instructions:


                      • Firstly add rolled oats into the blender and grind to form a fine powder.Add the rest of the ingredients and blend until smooth.Serve immediately.
                      • NOTES
                        • Add 1/4 to 1/2 cup apple juice to adjust the consistency ,if desired.

                            Ingredients:
                            1. Over ripe Bananas- 2 medium 
                            2. Cooked oatmeal - 1/2 cup ( at room temperature)
                            3. Almonds- 8 to 10
                            4. Low fat yogurt- 1/3 cup
                            5. Honey- to taste
                            Instructions:



                          • Add all the ingredients into a blender.Blend until smooth.Serve immediately.
                          • NOTES
                            • Soak almonds in water for about 2 to 3 hours,if desired.
                            • For best results use frozen bananas.

                              Kerala Bonda | Fried whole wheat and banana cake

                              Popular Kerala tea time snack made using whole wheat flour , banana and jaggery.(also known as undanpori in North Kerala.)
                              Prep Time: 10 minutes ( 2 hours for fermentation)
                              Cook time: 30 minutes
                              Makes: 20 to 25 bondas
                              Ingredients:
                              1. Jaggery,grated-3/4 cup
                              2. Sliced coconut(cut into small pieces)-1/4 cup
                              3. Whole wheat flour- 2 cups
                              4. Baking soda- 1 large pinch
                              5. Salt-1 pinch
                              6. Cardamom powder,freshly ground-1/2 tsp
                              7. Small banana(preferably palayankodan pazham)- 3 nos
                              8. Water-as required
                              9. Ghee-1/2 tbsp
                              10. Coconut oil-for deep frying
                              Instructions:
                            • In a heavy bottomed pan,melt grated jaggery adding 1/4 cup water.Keep aside.Allow it to cool completely.
                            • Heat ghee in a pan and add the coconut bits.Fry until it turns golden brown.Keep aside.
                            • In another bowl,mash the bananas using a fork.
                            • Add melted jaggery and fried coconut ,mix well until combined.
                            • In a mixing bowl mix together whole wheat flour,baking soda,salt and cardamom powder using a fork.Add the banana -jaggery mixture and 1/4 cup water to the dry ingredients and gently mix until combined.
                            • Add more water if required,and mix gently to form a sticky dough.Do not over mix.Cover and allow it to ferment for about 2 hours.
                            • Heat oil in a pan over medium flame.Dip your hand in water(to avoid sticking) ,take a small portion of the dough and shape it into a lemon sized ball,then carefully slide the dough off your fingers into the hot oil.Repeat with the remaining dough.
                            • Fry until it turns deep golden brown,turning once or twice in between.(Make sure that you cook it over medium flame ,else the bondas will brown too quickly and remain uncooked inside.) Drain onto a kitchen towel.Serve with tea.

                                Best Ever Banana Bread Recipe

                                Moist and delicious Banana bread,packed with banana flavor.
                                Prep Time: 15 minutes
                                Cook time: 70 minutes
                                Yields: 1 loaf
                                Ingredients:
                                1. All purpose flour- 1 and 3/4 cups
                                2. Sugar-1 to 1.5 cup( see notes)
                                3. Baking soda- 1 tsp
                                4. Cinnamon powder- 1/4 to 1/2 tsp( optional)
                                5. Nutmeg powder- 1 pinch( optional)
                                6. Salt-1/4 tsp
                                7. Ripe bananas ,mashed- 2 medium( 1 cup)
                                8. Eggs-2 
                                9. Canola oil-1/2 cup
                                10. Butter milk-1/4 cup plus 1 tbsp
                                11. Vanilla extract-1 tsp
                                12. Walnuts,chopped-1 cup(optional)
                                Instructions:


                              • Preheat oven to 180 deg c.Line a 9" x 5" loaf pan with parchment paper.
                              • In a mixing bowl mix together,all purpose flour,sugar,baking soda,cinnamon powder,nutmeg powder and salt,using a fork/whisk.keep aside.
                              • In another bowl,add mashed bananas,eggs,canola oil,buttermilk and vanilla extract.
                              • Add this to the dry ingredients and mix just until combined.( Do not over mix).Fold in the chopped walnuts,if using.
                              • Pour the batter into the prepared pan and bake for about 1 hour 10 minutes or until a cake tester inserted into the cake comes out clean.( I halved the recipe and it was done in 40 minutes.)
                              • Cool on wire rack.
                              • NOTES
                                • Adjust the quantity of sugar according to your taste.If you like it less sweet ,use just 1 cup sugar.You can use brown sugar instead of granulated sugar,if desired.
                                • I halved the recipe  and used 1/2 cup brown sugar and 1/8 cup regular sugar and it was just perfect.
                                • Cinnamon powder and nutmeg powder gives a nice flavor to the bread.
                                • I used just 2 tbsp chopped walnuts,adjust the quantity according to your taste.
